The evening, in moments

A dinner is not one experience but a chain of moments, and guests remember the weakest link. We follow the whole chain: the booking; the welcome at the door; being seated; the first words from the server; the drinks; the pace between courses; how the food looks and tastes when it arrives; how any small problem is handled; the bill; and the goodbye.

What we notice

The first impression from the street, and the location and access. The warmth of the greeting, and the body language and attitude of the team. Whether the team knows the menu, the wine and the allergens, and how they handle confusion, a late booking, an unfamiliar request or a mistake. Whether the table is looked after without being hovered over. Cleanliness and hygiene, down to the glassware and the washrooms. The atmosphere: light, music, scent and noise. How well the experience matches the promise made by the brand, the menu and the marketing. Whether the bill matches what was ordered.

An illustrative finding

Illustrative example, not a real client. Service was warm and well paced until dessert, when the table waited fourteen minutes for the bill. Recommendation: give one team member responsibility for closing each table.

What you receive

A confidential, scored report with plain-language observations, what to keep doing and what to fix first, followed by a private debrief.
